We hand select a mix of cuts to fulfill each category.

• Roasts & cuts: roasts, chuck roasts, tri-tip, ribs, brisket, crosscut shank, stew meat, etc.
• Steaks: rib-eye, filet mignon, New York, top sirloin, flank, skirt and may include others like picanha, hangar, flap, petite shoulder filet, flat iron etc.
